How a grease arrestor works
Wastewater from your kitchen sinks and dishwashers enters the arrestor, where flow slows down inside a baffled tank. Fats and oils float to the top, food solids settle to the bottom, and clean water in the middle exits to the sewer. A licensed liquid-waste contractor then pumps out the accumulated FOG on a scheduled cycle - usually every 4 to 13 weeks depending on your council and your volume.
