How a grease arrestor works

Wastewater from your kitchen sinks and dishwashers enters the arrestor, where flow slows down inside a baffled tank. Fats and oils float to the top, food solids settle to the bottom, and clean water in the middle exits to the sewer. A licensed liquid-waste contractor then pumps out the accumulated FOG on a scheduled cycle - usually every 4 to 13 weeks depending on your council and your volume.

How to size a grease arrestor

Grease trap sizing in Australia follows AS 3500.2 and your local water authority's guide (Sydney Water, City West Water, Yarra Valley Water, Queensland Urban Utilities, SA Water, etc). The rules vary, but as a broad indicator:
